Garlic naan in a cast iron skillet — tawa-style (no yeast, no oven)

Thanks to HelloFresh for sponsoring this video! Use code 80ADAMRAGUSEA to get $80 off across five HelloFresh boxes, including free shipping on your first box: 🤍 Yeast + chemical leaveners: 🤍 *NO-YEAST RECIPE, MAKES 4 NAAN* Dough: 2 cups (250g) all-purpose flour 1 teaspoon sugar 1/2 teaspoon salt 1/4 teaspoon baking soda 1 teaspoon double-acting baking powder 2 tablespoons oil 1/2 cup (100mL) milk or water, plus more as needed 1/4 cup (60g) yogurt (ideally with live cultures) Toppings: grated garlic fresh chopped cilantro melted butter (if using unsalted butter, also top the finished naan with a little more salt) Combine all the dough ingredients and knead — adding additional milk/water as needed — until you have a dough that is soft, springy, and only a little sticky. Oil the dough ball, cover it and leave it for at least a half hour, but ideally for several hours. (I suspect additional fermentation will occur over those hours if you use a yogurt with live bacterial cultures.) Knead the dough again right before baking, and divide it into four balls. Get a well-seasoned cast iron skillet heating (medium heat is the right temp on my stove, but you'll have to experiment). Roll out a naan just shy of the thinnest you can make it, top with some grated garlic and chopped cilantro and roll the toppings into the dough. Immediately before baking, flip the dough around and slightly wet the bottom side with water. Press the dough wet-side-down into the hot skillet. If your heat and dough are right, you should have a few bubbles within two minutes, and the edges should be looking dry and cooked. (Another clue I use about when to flip is to smell for the first hint of anything burning.) When you think the first side is cooked, invert the pan over your burner. (The starch paste on the bottom of the dough should make it stick securely to the skillet.) Turn your heat higher and brown the top side of the dough until the bubble peaks are starting to burn, but before the whole top looks cooked — you want much of the surface to still look doughy. (If you have an induction stove, or you just don't want to do the risky pan-inversion maneuver, you can simply flip the naan and cook the top side directly on the pan, but flip it back around before the top looks fully cooked. You want some doughy surface.) Flip the pan back around and take it off the heat. Brush the naan with melted butter and maybe sprinkle on some salt, then use a spatula to scrape the naan out of the pan. Give the pan a quick wash and dry before you bake the next loaf. *YES-YEAST RECIPE, MAKES 4 NAAN* Dough: 2 cups (250g) all-purpose flour 1 teaspoon sugar 1/2 teaspoon salt 1 teaspoon dry yeast 1/2 teaspoon double-acting baking powder 2 tablespoons oil 1/2 cup (100mL) milk or water, plus more as needed 1 tablespoon yogurt (ideally with live cultures) Toppings: grated garlic fresh chopped cilantro melted butter (if using unsalted butter, also top the finished naan with a little more salt) Combine all the dough ingredients and knead — adding additional milk/water as needed — until you have a dough that is soft, springy, and only a little sticky. Oil the dough ball, cover it and let it rise for at least an hour. Knead the dough again right before baking, divide it into four balls, and let them proof for about 15 minutes. If your heat and dough are right, the edges should be looking dry and cooked within two minutes, and the dough should have puffed up a bit though I rarely get large bubbles with the yeast version of this dough. (Another clue I use about when to flip is to smell for the first hint of anything burning.) When you think the first side is cooked, invert the pan over your burner. (The starch paste on the bottom of the dough should make it stick securely to the skillet.) Naan Bread is on the menu in Chef Anna Olson's amazing kitchen, and she is going to teach you how to make this delicious recipe from scratch! Follow along with the recipes below! Subscribe for more video recipes: 🤍 Recipe Naan bread is traditionally baked on the walls of a tandoori oven, but you can easily make this at home, using a cast iron skillet. Once you see how easy it is to make authentic naan from scratch, you’ll never buy pre-made again! Servings: 6 Prep Time: 15 minutes Resting Time: 1 hour Cook Time: 15 minutes Ingredients ¾ cup (180 mL) warm water (just about body temperature) ½ cup (125 mL) plain yogurt (any fat %) 2 Tbsp (60 mL) olive oil or vegetable oil 2 ¼ tsp (1 pkg) 8 g instant yeast 2 ½ cups (375 g) all-purpose flour (plain flour) ½ tsp (2 mL) salt melted butter or ghee, for brushing sea salt and/or chopped fresh coriander, for sprinkling Directions 1. Place the water, yogurt, oil, yeast, 2 ¼ cups (337 g) of the flour and salt in a large mixing bowl and stir with a wooden spoon until it becomes to awkward. Pour the remaining ¼ cup (37 g) of flour on a clean work surface and tip the dough out onto it. Knead the dough for about 3 minutes, turning it and working in all of the remaining flour. Place the dough back in the bowl, cover the bowl with plastic wrap and set aside to rise for an hour. 2. Turn the dough out onto a work surface lightly dusted with flour and divide it into 6 pieces. Roll out each piece of dough into a rough circle (precision is not essential here) about 8 or 9-inches (20-23 cm) across. 3. Heat a cast iron or other heavy-bottomed skillet on high heat. Drop in a naan and cook for about 90 seconds, until browned in spots on the bottom. Use tongs to flip the naan over to cook another 90 seconds, until the bubbles blister and turn toasty brown. Brush the naan with melted butter or ghee, sprinkle with salt and/or coriander. Repeat with the remaining pieces of dough. Stacking the naan will keep it warm, or you can hold them in a 300 F (150 C) oven until ready to serve. The naan is best eaten the day it’s cooked. Turkish Bread That Drives Everyone Crazy! Bazlama is the tastiest I've ever eaten! Anyone can do it.

*This is the tastiest Bread I've ever eaten! Fluffy, Bubbly and Chewy Turkish Flatbread, No oven! Anyone can do it in their kitchen.* Grilled Flatbread that drives the whole world crazy. It is very tasty to eat with fried chicken or baked meat. This flat bread can be used as a base for a taco, pizza or sandwich. Just wrap it around your favorite food. This recipe has been proven over the years, the dough is tastier than in Turkish restaurants, I have been on vacation in Turkey several times and I am sure this is the recipe that makes me make this bread again and again. 😎 📢 *SUBSCRIBE:* 🤍 *Recipe and ingredients for 6 pieces of flat bread:* 2 teaspoons dry yeast (10 grams). 2 teaspoons sugar (10 grams). 2/3 cup warm water (165 milliliters). Add to bowl. 2/3 cup warm milk (165 milliliters). Stir to dissolve yeast. Cover for 10 minutes. Sift 500 grams of flour (3 heaped cups). Add 1 teaspoon salt (5 grams). Add liquid with yeast and mix with a spoon. 1 tablespoon olive oil (15 milliliters). Knead the dough by hand for 2 minutes. The bread dough is very soft and a little sticky. Cover the dough for 1 hour and leave in a warm place to rise. The dough has doubled in size. Sprinkle the table with flour and let the air out of the dough a little. Divide into 6 equal parts. Make balls. Cover the dough so it doesn't dry out while you roll it out. For convenience, you can use a silicone cooking mat. Roll out the dough into a circle with a diameter of 18 centimeters (7 inches). The thickness of the dough is about 5 millimeters. Cook in a hot pan without oil. On medium heat for about 3 minutes. When bubbles appear, flip the bread. This Turkish bread is similar to Naan bread in other regions of the world. Cover hot flatbreads immediately with a tea towel to keep them soft. All actions are very fast, while one bread is fried, we roll the next one. Fry in a pan in the same way until the bread is golden brown on both sides. Finely chop some parsley. Brush each flat bread with olive oil. Sprinkle with parsley. Add red pepper to taste. Nobody will ever mistake this for just another basic flatbread. Perfect for slopping up your favourite curries – yet so good that you'll happily devour it plain, straight out of the skillet. Fluffy, bubbly and chewy, just like you get at Turkish restaurants. *Bon Appetit!* 🤩 *I recommend to look at these popular bread recipes:* ✅ 🤍 ✅ 🤍 #recipe #bread #bazlama

📹 FOOT LONG OMELETTE SANDWICH • ROTI JOHN: 🤍 📹 POPULAR KOREAN ISAAC TOAST • BREAKFAST TOAST: 🤍 📌 Subscribe for 2-3 new videos weekly: 🤍 - Naan in parts of the Indian subcontinent usually refers to a specific kind of thick flatbread (another well-known kind of flatbread is chapati). Generally, it resembles pita and, like pita bread, is usually leavened with yeast or with bread starter (leavened naan dough left over from a previous batch); unleavened dough (similar to that used for roti) is also used. Naan is cooked in a tandoor, from which tandoori cooking takes its name. This distinguishes it from roti, which is usually cooked on a flat or slightly concave iron griddle called a tava. Modern recipes sometimes substitute baking powder for the yeast. Milk or yogurt may also be used to impart distinct tastes to the naan. Milk used instead of water will, as it does for ordinary bread, yield a softer dough. Typically, it is served hot and brushed with some water but in some other cultures such as those in the Indian Subcontinent, they brush ghee or butter. It can be used to scoop other foods or served stuffed with a filling. I would love to connect with you! Subscribe to my channel here: 🤍 For more great recipes check out my website: 🤍 Follow me: on 🤍 on 🤍 on 🤍 OK you lot! I have been quizzed about naan for as long as I can remember and my recipe has had a number of different iterations. With a family coming from the Punjab region in Northern India where wheat is the main staple, all breads (from naan or roti to paranthas) form a huge part of the diet. Personally I would choose a bread over rice every day. Traditionally the dough for naan is a leavened naturally with a live yoghurt, which is what aerates it. The dough would be slapped onto the inside of a tandoori oven where it would bake and fall into the fire once cooked. This cooking style is pretty difficult to replicate and when my mum first came to the UK she used all sorts of crazy things to get those precious little bubbles into the naan dough, from lemonade through to Original Andrews salts (yes the tummy salts) but I now have a formula which makes the naan light, airy and it will work in your kitchen. I can promise you, you will never buy naan again. Ingredients 1 tsp dried active yeast 1 tsp sugar 200g plain flour 1 tsp black onion seeds (you can also use handful of chopped coriander leaves) ½ tsp salt ½ tsp baking powder 1 tbsp vegetable oil 2 tbsp plain yoghurt 2 tbsp milk Method In a small bowl, mix the yeast and sugar with a tablespoon of warm water to activate. Leave for 5 minutes in a warm place until frothy. Meanwhile, in a separate bowl mix the flour, onion seeds, salt and baking powder. When the yeast is frothy add it to the flour with the oil and yoghurt. Knead the dough with slightly wet hands folding as you go. If it feels a little dry add some milk and continue to knead. Once it's nice and soft cover with cling film and leave it in a warm place to rise for at least 1 hour (but longer if possible). Turn the grill on to heat up and divide the dough into four balls and place on a floured surface. Roll each into a tear shape about 0.5cm / ¼ inch thick. Heat the Tava or frying pan and place the naan onto it for a couple of seconds to brown on one side. Transfer to a baking tray (seared side down) and place under the hot grill for 2-5 minutes and watch the magic as they puff up. Smear with butter - yummy!
