Freeze the cornflour coated fries for 30 minutes and fry again in moderately hot oil until crisp and golden brown in colour. Once fried, transfer them on a tray and season with salt, coriander powder, chilli powder and chaat masala. Garnish with fresh parsley and black pepper and crispy and crunchy french fries are ready to eat! Remove them on a paper towel. ● Transfer hot fries in a mixing bowl, sprinkle some salt and mix well. ● Sprinkle paprika powder and garnish with parmesan cheese. ● Serve hot. NOTE:- ● MILLY POTATOES HAVE EXCESS STARCH CONTENT, WHICH MAKES IT CRISPY. ● LEAVING THE POTATOES IN THE WATER RELEASES THE STARCH CONTENT. ● PARBOILING THEM ON A SIMMERING TEMPERATURE, COOKS IT EVENLY. I suppose this is more of a techniques than a recipe. Take whatever potatoes you want. Peel them, or don't. Cut them into fry-like shapes, being sure to get roughly equal thickness, and cut them maybe twice as thick as you want them — they'll shrink a lot during cooking. I do one large Russet potato per person. Boil them until you're afraid they're going to fall apart — I do about eight minutes. Gently drain them and lay them on a pan wide enough to hold them all in a single layer. Drizzle on enough oil to thoroughly coat all the pieces. Shake the pan to coat the pieces and get the fries evenly distributed. Roast at 450ºF. Check on them after 45 minutes — add more oil if they look dry, and move around any pieces that seem to be cooking unevenly. Roast them some more until they're brown and crispy, maybe another 45 minutes. Be careful not to overcook them — very brown will taste burned. You can pull them when they're still a little floppy, because they will harden as they cool. The ones I made in the video are just a bit overcooked. Place kitchen towel or a couple layers of paper towel in a large bowl, and dump the fries in. Let the towel soak up the excess oil, and then whip it out. Season the fries in the bowl and then toss. I use coarse salt, pepper, garlic powder, chopped cilantro and grated parmesan. MY COOKING PHILOSOPHY: I don't like weighing or measuring things if I don't have to, and I don't like to be constantly checking a recipe as I cook. I don't care that volume is a bad way of measuring things — it's usually easier. I like for a recipe to get me in the ballpark, and then I like to eyeball and improvise the rest. If you're like me, my goal with these videos is to give you a sense of how the food should look and feel as you're cooking it, rather than give you a refined formula to reproduce.

Peel the potatoes, then, cut each potato lengthwise into 4 or 5 pieces, then cut each piece into sticks. Each stick should be about 1cm (1/2-inch) thick. 2. Rinse potatoes under cold water, then place potatoes in a large bowl and cover with water. Let soak for 30 minutes. 3. Pat dry with a clean kitchen towel. 4. Heat oil in a deep-fryer or large saucepan to 275-300F (135-150C). 5. Gently add the potatoes to the oil, in batches, and fry for about 3-5 minutes, until soft, but not golden, stirring and flipping the potatoes occasionally. Remove from oil and drain on a paper towel. Let cool. 6. At this stage you can freeze the potatoes and keep them until ready for use. 7. Heat oil to 400F (200C). Fry the potatoes again, in batches, until golden brown, about 7-8 minutes. 8. Remove from oil, transfer to a paper towel to drain. Season with salt and pepper. 9. Serve with ketchup and mayonnaise. Notes: • Best potatoes for French fries: do not use waxy potatoes, use starchy potatoes only. Russet potatoes are ideal for French fries. • Frying potatoes twice is the best way to obtain the crispiest result. • How to freeze French fries: after frying potatoes once, transfer them to a plate/tray and freeze them for 40 minutes. Then transfer to them to a freezer bag and freeze them for up to 3 months. When ready to serve, remove them from the freezer and fry them in batches at 400F° (200C°) until golden brown. As for the cheese sauce okay real quick... 1 tablespoon butter heated up medium low Wangjangle in 1 tablespoon of flour until you have your roux (pronounced rouwks) Slowly whiskjangle in a cup of milk as it clumps and you freak out then it turns smooth and you feel better Take it off the heat and add in a cup of dismantled cheddar add in a bit of garlic powder and some freeze dried chives If you feel like it but you don't have to It will thicken as it cools so don't cook it down too much. Just the perfect amount
So I wanted to create the perfect french fry. Sure you could make a quick french fry and just fry them until they're kinda crispy, but then again they'll also be kinda limp and sad. I wanted something with that beautiful crunchy crust on the outside and soft fluffy inside. Something that practically snaps in half. With this method I think we've got just that. Get full recipe here 🤍 Some of the products I use and recommend: 🤍 (affiliate) Making French fries is certainly not rocket science but there are a lot of elements to consider in thriving for perfection. Firstly you want large oval shape potatoes for the best cuts. You want the right size, 1 centimetre or just under half an inch is the optimal size. Smaller and they will be too crisp with more oil, larger they will be too moist and mushy in the centre. You don't have to use a ruler, it's just a guideline, a little less or more won't make any difference. For the oil, you can't beat the taste of beef dripping, but for healthier reasons it's best to use vegetables oils, I like Canola, peanut, sunflower oils. You can use the one you like, but the secret is that it has to be fresh. You can use it several times but the older it gets the faster it will reach smoking point resulting in darker fries with less crisp. Use a large pot and never fill the pot to more than half full. Use a good deep fryer that contains a large quantity of oil, otherwise make them in small batches to avoid the oil cooling down too quick once you add the fries. I have included a chili salt recipe to bring them to another level, but if you're a purist at heart, then simply use a fine salt. You can also blanch the fries then refrigerate or freeze for later use. But if you want them straight away, let them cool down before the second fry. Want to post me something? Need a shoutout? The secret to these is a lot of oil for it to roast in and at a high temperature. No special steps to take such as soaking to remove starch or preboiling. A lot of times I just want to get these fries on the table quick and this quick one step method has always worked for me. Flavour these however you want but I love a good cajun spiced fry! I use granulated garlic rather than the fresh stuff as it roasts at a high temperature and the garlic can quickly burn. 4 large russet potatoes, cut into French fries ¼ cup light olive oil, or any neutral oil 1.5 tbsp Cajun seasoning (I used unsalted) 1 tbsp granulated garlic 1 tbsp salt Fresh parsley for garnish Preheat oven to 425 F. In a parchment lined baking sheet toss the cut potatoes with oil, Cajun seasoning, granulated garlic, and salt. Roast in the oven for 15 minutes. Take the sheet pan out and flip the potatoes and take the pan back to the oven and roast again for another 15-20 minutes until golden and crispy. Full Writteen recipe for French fries Prep time: 15-20 minutes Cooking time: 40-45 minutes (including resting time) Serves: 1-2 Peri peri spice mix Ingredients: • Kashmiri red chilli powder 1 tbsp • Spicy red chilli powder 1 tsp • Garlic powder 1 tsp • Onion powder 1 tsp • Dry mango powder 1 tsp • Black pepper powder ½ tsp • Oregano 1 tsp • Salt 1 tsp • Sugar 1 tsp Method: • In a mixer grinder jar, add all the peri peri spice mix ingredients & grind them well to make a fine powder, you can also add all the ingredients in a jar & mix them well by shaking the jar. Make sure to add powdered sugar if you're just mixing the spices in the jar • Your peri peri spice mix is ready. French fries Ingredients: • Potaotes as required • Vinegar 2 tsp • Salt as required • Black pepper powder a pinch • Peri peri mix as required Method: • To make the French fries, peel the potatoes & keep them submerged in cold water, this will prevent them from oxidizing. • Now to shape them into French fries, you will need to cut both the top & bottom tips of the potato & place it vertically on your chopping board, trim all the four sides of the potato & then cut thick slices of it, they should be 1 cm thick, make sure you cut all the slices evenly. • Further lay down the thick slices & again cut 1 cm wide french fries, put them in ice cold water & rinse them thoroughly. • Once you have cut the french fries as required, set a stock pot & boil water in it, add the vinegar & salt to the boiling water. • Now add the french fries in the boiling water & blanch them for 10 minutes, keep stirring them in regular intervals using a spider so that they cook evenly. • After 10 minutes, take them out of the boiling & place them on a wire rack, if you don’t have wire rack then you can place them on a paper towel lined tray. • Let them rest for 10-15 minutes & meanwhile heat the oil in a kadhai to fry them later, heat the oil till it reaches 200°C, if you don’t have a thermometer then heat it slightly more than you usually do for frying. • After the fries have rested & the oil reaches the right temperature, drop the fries carefully in hot oil & fry them for 45-60 seconds. • After you have fried them for 45-60 seconds, remove them from the hot oil using a spider & place them on a wire rack again & let them rest for 10-15 minutes. • After this first stage of frying, you can place them in a ziplock bag & freeze them to make instant fries in the future, they can easily last in the freezer for a couple of weeks. • Once the fries have rested, heat the oil to 200°C again & drop the french fries in the hot oil, the temperature will drop to 170-175°C, maintain the same temperature while frying them, if you don’t have a thermometer to maintain the temperature just lower the flame after heating the oil really well & fry until they turn light golden brown & crispy. • When the fries turn light golden brown & crispy, transfer them into a bowl using a spider and immediately sprinkle salt to taste & black pepper powder to taste & toss them well. • Your regular crispy french fries are ready. • To make peri peri french fries, transfer the fries into bowl after they turn light golden brown & crispy, then immediately sprinkle salt to taste & also sprinkle peri peri spice mix as required & toss them well. • Your peri peri french fries are ready. #YFL #SanjyotKeer #FrenchFries The Music I use in All my videos - 🤍 (Best for independent creators) Follow us on all platforms: Facebook - 🤍 Instagram - 🤍 Follow my personal handles here: (Chef Sanjyot Keer) Facebook - 🤍 Instagram - 🤍 Twitter - 🤍
