Cooking Time: 25 minutes. Makes 4 toasts. To be blended into garlic green chutney (Makes approx. ¾ cups) 1½ cups roughly chopped coriander (dhania) ¼ cup freshly grated coconut 1 tbsp chopped spinach (palak) 1 tbsp roughly chopped garlic (lehsun) 2 tbsp roughly chopped green chillies Salt to taste A few drops of lemon juice ¼ cup water For the aloo masala 2 tsp oil ½ tsp mustard seeds (rai/sarson) 6 to 8 curry leaves (kadi patta) 1 cup boiled, peeled and mashed potatoes ¼ cup boiled green peas ¼ tsp turmeric powder (haldi) 1 tsp green chilli paste 1 tbsp finely chopped coriander (dhania) Salt to taste Other ingredients 8 slices bread slices 8 tsp butter 8 tsp garlic green chutney, recipe above 1 tsp sandwich masala 8 onion slices 12 tomato slices ½ cup capsicum slices 3 tsp butter for brushing and greasing For the topping 2 tsp butter for brushing 4 tbsp Nylon sev For serving Tomato ketchup Garlic green chutney For the aloo masala 1. Heat the oil in a deep non-stick pan and add the mustard seeds. 2. When the seeds crackle, add the curry leaves and sauté on a medium flame for a few seconds. 3. Add the potatoes, green peas, turmeric powder, green chilli paste, coriander and salt, mix well and cook on a medium flame for another minute. 4. Divide the aloo stuffing into 4 equal portions and keep aside. How to proceed 1. Apply 1 tsp of butter and 1 tsp of garlic green chutney on each bread slice and keep aside. 2. Place a slice of bread, with the buttered side facing upwards, on a clean, dry and flat surface. 3. Place one portion of the aloo masala and spread it evenly over it. 4. Arrange 2 onion slices, 3 tomato slices and 6 to 7 capsicum slices over the stuffing and sprinkle ¼ tsp of sandwich masala evenly over it. 5. Cover it with another slice of bread, with the buttered side facing downwards and press it lightly. Spread ¼ tsp of butter evenly over the bread slice. 6. Grease a sandwich toaster on both the sides using ½ tsp of butter. 7. Place the sandwich in the sandwich toaster and cook on a medium flame, till it turns brown and crisp from both the sides. 8. Cut into 6 equal pieces, place it on a plate and apply ½ tsp of butter evenly over it. 9. Sprinkle 1 tbsp of sev evenly over it. 10. Repeat steps 2 to 8 to make 3 more toasts. Serve immediately with tomato ketchup and garlic green chutney. Variation: Cheese masala toast: Place a generous amount of grated processed cheese over the capsicum slices (at step 4 after the capsicum slices) and proceed as per the recipe. Finally at step 8 replace the Nylon Sev with grated processed cheese for the topping and serve immediately.

Take the typical potato stuffing out of the Masala Dosa and replace it with a tongue-tickling Schezuan Chopsuey, and there you have a unique snack that is both filling and tasty. With noodles and colourful veggies, this dosa’s stuffing is quite sumptuous too. Preparation Time: 15 minutes. Cooking Time: 20 minutes. Makes 4 dosas. For the Schezuan chopsuey ¼ cup Schezuan sauce 1 cup boiled noodles 2 tbsp butter 1 cup chopped onions 1 cup shredded cabbage ¾ cup carrot juliennes ¾ cup capsicum juliennes 2 tbsp tomato ketchup 1 tbsp chilli sauce Salt to taste ¼ cup finely chopped spring onion greens Other ingredients 2 cups readymade dosa batter Melted butter for cooking For serving Coconut chutney Sambhar For the Schezuan chopsuey 1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 2 minutes. 2. Add the cabbage, carrot and capsicum and sauté on a medium flame for 2 more minutes. 3. Add the tomato ketchup, chilli sauce, Schezuan sauce and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally. 4. Add the noodles and spring onion greens, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. 5. Divide it into 4 equal portions and keep aside. How to proceed 1. Heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth. 2. Pour a ladleful of the batter on the tava (griddle) and spread in a circular motion to make a 200 mm. (8”) diameter circle. 3. Spread a little butter over it and cook on a medium flame till it turns slightly crisp and golden brown in colour. 4. Place one portion of the Schezuan chopsuey in a row in the centre and fold it over from both the sides. 5. Repeat steps 1 to 4 to make 3 more dosas. Serve immediately with coconut chutney and sambhar.

Although these batter-fried bread fritters are available all over the country, Mumbai’s street-side vendors have their signature creations, which are a class apart. Prepared with or without fillings such as aloo and green peas, this mouth-watering deep-fried snack gets all the more exciting when topped with a variety of chutneys. Enjoy it hot and fresh off the kadhai, customized to your taste. Preparation Time: 20 minutes. Cooking Time: 10 minutes. Makes 4 plates (4 pieces) 4 slices bread Oil for deep-frying For the aloo masala 1 cup boiled, peeled and mashed potatoes 2 tsp oil ½ tsp mustard seeds (rai / sarson) 5 to 6 curry leaves (kadi patta) ¼ cup boiled and coarsely mashed green peas ¼ tsp turmeric powder (haldi) 1 tsp ginger-green chilli paste 1 tbsp finely chopped coriander (dhania) Salt to taste To be mixed into a smooth batter (using ½ cup water) 1 cup besan (Bengal gram flour) ¼ tsp turmeric powder (haldi) ½ tsp chilli powder A pinch of asafoetida (hing) Salt to taste For serving Meetha chutney Teekha chutney Sukha lehsun ka chutney For the aloo masala 1. Heat the oil in a deep non-stick pan and add the mustard seeds. 2. When the seeds crackle, add the curry leaves and sauté on a medium flame for a few seconds. 3. Add the potatoes, green peas, turmeric powder, ginger-green chilli paste, coriander and salt, mix well and cook on a medium flame for one minute. 4. Divide into 2 equal portions and keep aside. How to proceed 1. Place a slice of bread on a clean, dry and flat surface and spread a portion of the aloo masala evenly over it. 2. Place another slice of bread over it, press lightly and cut it diagonally into 2 equal pieces. 3. Heat the oil in a deep non-stick kadhai, dip one piece at a time in the batter and deep-fry on a medium flame till it turns crisp and golden brown in colour from both the sides. Drain on an absorbent paper. 4. Repeat steps 1 to 3 to make 3 more bread pakodas. Serve immediately with meetha chutney, teekha chutney or sukha lehsun ka chutney. Handy tip: For the aloo stuffing in this recipe, you may avoid using green peas if required. Further, you may also use leftover batata vada mixture as a filling for this recipe. Variation: Make these bhajjis without the stuffing! Apply teekha chutney and sukha lehsun ka chutney between the bread slices, coat with batter and deep fry.

For the rice and noodles 2 cups cooked rice (chawal) 1 cup boiled noodles 3 tbsp oil 1 tsp finely chopped celery (ajmoda) 1 tbsp finely chopped garlic (lehsun) ¼ cup finely chopped spring onion whites and greens ¼ cup shredded cabbage ¼ cup thinly sliced carrots ¼ cup schezuan sauce Salt to taste 2 to 3 drops orange-red food colour dissolved in 1 tbsp of water (optional) For the gravy 1 tbsp oil 1 tsp finely chopped ginger (adrak) 2 tsp finely chopped garlic (lehsun) ¼ cup shredded cabbage 1 tbsp finely chopped spring onions whites and greens 2 tbsp schezuan sauce 1 tsp tomato ketchup 1 tsp soy sauce 1½ tbsp cornflour dissolved in 1 cup of water A pinch of sugar Salt to taste A pinch of freshly ground black pepper (kalimirch) powder 1 to 2 drops orange-red food colour 1 tbsp of water (optional) Other ingredients 1 cup fried noodles For the garnish 1 tbsp finely chopped spring onions greens For the rice and noodles 1. Heat the oil in a wok or broad non-stick pan, till it smokes, add the celery and garlic and sauté on a high flame for a few seconds. 2. Add the spring onions, cabbage and carrots and sauté on a high flame for 1 to 2 minutes. 3. Add the schezuan sauce, mix well and cook on a medium flame for 1 minute. 4. Add the rice, noodles and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Keep aside. For the gravy 1. Heat the oil in a wok or a broad non-stick pan, till it smokes, add the ginger, garlic and sauté on a high flame for a few seconds. 2. Add the cabbage, and spring onions and sauté on a high flame for 1 to 2 minutes. 3. Add the schezuan sauce, tomato ketchup and soy sauce, mix well and cook on a medium flame for 1 minutes. 4. Add the cornflour-water mixture, salt, sugar and pepper, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. Keep aside. How to serve 1. Warm the rice and noodles and gravy. 2. Take a serving plate and put the rice and noodles at the bottom, top it with the gravy and finally sprinkle the fried noodles. Serve immediately garnished with spring onion greens.
🧳 EBBIN: 🤍 🎥 WATCH: Indian Veg Food 🤍 👕 DAVID’S BEEN HERE SHIRTS & MERCH: 🤍 Day five in Kerala, India saw me briefly visit the neighboring state of Tamil Nadu, where I visited some beautiful, secret vineyards and tried some roadside snacks in Gudalur, India! Come along with me as my south Indian adventure continued! My latest adventure started in the Thekkady area of Kerala, were my boy Ebbin and I hopped in a Jeep to make my way over to Tamil Nadu! Our Jeep was basically a safari vehicle for off-roading in the jungle. We passed by a coffee plantation full of red coffee beans growing on the plants there. I tried it, but I didn’t like it, so I spit it out. The biggest difference between exiting Thekkady vs. entering it was that, exiting it, it felt more wild. There was more forest and bush, whereas entering, we saw mostly tea plantations. We were also heading downhill because Tamil Nadu is a flatland, whereas Kerala has high mountains. I hadn’t seen a single monkey, but as soon as we entered the forests of Tamil Nadu, there were macaques everywhere along the roads! As we continued, I could see the plains of Tamil Nadu far below us. The two states are separated by a mountain range. The road was really winding and full of traffic, but this aggressive 4x4 handled the road really well. Finally, we arrived in the flatlands of Tamil Nadu! This area is mainly farmland. They have lots of green beans, cotton trees, palm trees, and banana trees. It’s also very dry, arid, and hot the moment you come down off the mountain. I had no idea there were vineyards in Tamil Nadu, but we came across one on our way to Gudalur. They don’t make wine, but they grow grapes. Their vines didn’t grow in rows like other vineyards I’d visited. These grew on top of wires and they go underneath to get the grapes. We also saw cotton plants, which had fruits growing on them. Inside the vineyard, I went underneath the wires and saw tons of big bunches of grapes hanging down. They were so sweet and refreshing! Then, we headed to a stand that sells non-alcoholic wine. It was grape juice with a bit of carbonation. It was super light and fruity. I saw that they also sold jungle honey, dried fruit with honey, and honey with nuts! I bought some for 140 rupees, or about $1.86 USD. Before we headed back to Kerala, we stopped stand selling orange coconuts and bananas. The coconut had so much milk in it! Then, the vendor cut it so I could eat the meat. It was soft and delicious and only cost 40 rupees/$0.53 USD. I also tried a delicious red banana and a smaller yellow one. Then, we hopped back in the Jeep and headed back to Kumily. From there, we set out to get some banana chips at Kairali Chips. They make banana chips with pepper; banana chips with masala; jackfruit chips; sweet banana chips with jaggery, sugar, cumin, ginger, and cardamom; and more. I got a sampler of banana chips and tried them. They were salty and so fresh, and I couldn’t taste any oil at all. They were super dense and tasty. I wanted to try the masala ones, too! I could also see homemade chocolates, honey with dried fruits, and more. I tried the almond chocolate, which was almost like chocolate fudge. It was even better than Swiss chocolate! From there, we headed across the street to Southern Crafts Handicrafts & Jewellery, where I found a beautiful and colorful cow mask that I negotiated down from 3600 rupees/$47.72 USD to 3000 rupees/$39.77 USD. There were also some massive elephant masks, but they were just way too big, but I absolutely loved them! Quick and easy, masala pav is made by stuffing spicy tomato-onion gravy inside butter-laden pavs. Sometimes, the pav is just roasted on the tava with butter, loads of coriander and pav bhaji masala. Ask for cheese along with it for a richer feel. Preparation time: 15 minutes. Cooking time: 30 minutes. Makes 4 plates (8 masala pav) Ingredients For the masala 4 tbsp butter 1 tbsp cumin seeds (jeera) 4 tbsp red chilli-garlic paste 1¼ cups finely chopped onions 1 cup finely chopped capsicum 4 cups finely chopped tomatoes Salt to taste ½ tsp chilli powder 1 tbsp pav bhaji masala ¼ cup finely chopped coriander (dhania) 1 tbsp lemon juice Other ingredients 8 tsp butter 8 laddi pav For serving A few lemon wedges Method For the masala 1. Heat the butter in a deep kadhai and add the cumin seeds. 2. When the seeds crackle, add the red chilli-garlic paste and sauté on a medium flame for 30 seconds. 3. Add the onions, capsicum and ¼ cup of water, mix well and cook on a medium flame for 5 to 7 minutes or till the onions turn translucent, while stirring occasionally. 4. Add the tomatoes, salt, chilli powder, pav bhaji masala and 1 cup of water, mix well and cook on a medium flame for 10 to 12 minutes, while stirring occasionally. 5. Mash it lightly, add the coriander and simmer for another minute. 6. Add the lemon juice and mix well. 7. Divide into 8 portions and keep aside. How to proceed 1. Heat 1 tsp of butter on a non-stick tava (griddle), add a portion of the prepared masala and sauté on a medium flame for a few seconds. 2. Slit 1 pav vertically, open and place it on the masala. 3. Spread the masala evenly over the pav till it gets evenly coated form all the sides. 4. Repeat with the remaining ingredients to make more masala pav. Serve immediately with lemon wedges.
